Ice cream is a frozen dessert made by blending milk, cream, sugar, and sometimes additional ingredients into a smooth and creamy treat through specialized freezing methods. Although it has been enjoyed for centuries, it only became widely accessible with the advent of modern refrigeration. Today, its popularity has led to many variations, including frozen custard, frozen yogurt, and dairy-free alternatives made from ingredients like coconut milk.
Ice Cream Composition
In the United States, true ice cream must contain between 10% and 16% milk fat. Varieties with higher fat content tend to be smoother because they contain less water, resulting in fewer ice crystals. Products with less than 10% milk fat are labeled as “ice milk” or, more commonly, low-fat ice cream.
Beyond dairy, ice cream often includes stabilizers—such as certain proteins—to maintain a uniform texture. Sweeteners like sugar or sugar substitutes are added to create the familiar sweetness. Some modern versions skip added sugar altogether, relying instead on the natural sugars found in milk and fruit for a milder taste.
The wide range of flavors has helped keep ice cream a favorite worldwide. From fruits like mango and pomegranate to unique options such as coffee or even basil, countless creative combinations have emerged over time.
How Ice Cream Is Made
Simply freezing milk or cream results in a hard, icy block rather than the smooth dessert we expect. To achieve the desired texture, special techniques are used to control ice crystal formation and incorporate air.
Churning the mixture—either by hand or machine—prevents large ice crystals from forming and introduces air, giving the ice cream its light, creamy consistency. This process creates a foam-like structure that softens the final product. There are also no-churn methods that simplify the process while still producing a creamy result.
Rock salt is commonly used during traditional ice cream making because it lowers the freezing point of ice. This allows the mixture to freeze faster by drawing heat away more efficiently, resulting in smaller ice crystals and a smoother texture. The salt itself never touches the ice cream, so it does not affect flavor.
Other rapid-freezing methods include using liquid nitrogen or dry ice. These techniques freeze the mixture almost instantly, producing very fine ice crystals. A well-known example is Dippin’ Dots, which are tiny beads of ice cream formed by freezing droplets of cream with liquid nitrogen.
How to Store Ice Cream
To maintain quality, ice cream should remain as cold as possible from the moment you leave the store. Allowing it to melt and refreeze can create large ice crystals, leading to a grainy texture and making it harder to scoop.
At home, store ice cream in the main section of the freezer rather than the door. The door is exposed to warmer air each time it’s opened, which can cause repeated thawing and refreezing that degrades texture.
After opening, place a layer of plastic wrap directly on the surface before closing the lid. This helps block air and moisture, preventing ice crystals and unwanted odors from affecting the ice cream. For the best taste and consistency, it is recommended to enjoy it within about one month of purchase.
